Hummus with Olive Tapenade and Pita Bread Recipe

Marinated Eggplant Hummus is a tasty and flavorful take on traditional hummus. The roasted eggplant adds a smoky depth of flavor, while the fresh herbs add brightness. Ideal for dipping vegetables, pita bread, or chips.

Ingredients

Time Needed

  • Prep Time: 10 minutes
  • Cook Time: 30 minutes
  • Total Time: 40 minutes

Instructions

  • Preheat the oven to 400°F.
  • Combine the diced eggplant, garlic, and 2 tablespoons olive oil in a mixing bowl.
  • Bake for 25-30 minutes, or until tender and lightly browned, on a baking sheet.
  • Combine the roasted eggplant mixture, chickpeas, tahini, lemon juice, cumin, smoked paprika, salt, and the remaining 2 tablespoons olive oil in a food processor.
  • Blend until smooth.
  • Add the chopped parsley and mint and pulse until combined.
  • Seasoning should be tasted and adjusted as needed.
  • Transfer the hummus to a serving bowl and chill for at least 30 minutes to allow the flavors to blend.
